Pineland Dairy in Bangor, Maine only uses milk from dairies that adhere to strict, all natural standards: the milk only comes from farms who have pledged not to use artificial hormones to increase milk production, and the milk is tested to ensure the it never contains any antibiotics. Pineland purchases milk from Pineland Farms, Stonyvale Farms, and Hicks Dairy Farm and uses only milk from registered Holsteins and Jerseys.

Most people don’t realize that the “Wasabi” they are being served at most Japanese restaurants is not Wasabi at all, but a blend of horseradish and food coloring. Singing Dog Vanilla employs what they call “Fair Trade Plus+®”, which is a partnership between the families who grow their vanilla and their company. Farmers are paid market prices for their vanilla bean pods and share Singing Dog Vanilla’s profits. In exchange for sharing a percentage of profits with the farmers, the farmers agree to practice organic and sustainable growing methods. Also, side note - these beans are everything an ice cream maker dreams of - plump, moist, fragrant Vanilla Beans!

The College grows their own citrus fruits - we are lucky to source their citrus fruits for use in our curds and sorbets at our Matsumoto location.

Located in San Joaquin Valley, Valley Fig Growers is a fig-grower owned cooperative and premiere handler of figs in North America. Fun fig fact shared with us from Valley Fig Growers: “Figs are actually an inverted flower blossom - it’s the only fruit tree where you won’t ever see a flower blooming.” We use Valley Fig Products most predominately in our “Bay of Figs” flavor!!

While they are known primarily for their perfumes, their line of Chef’s Essences provides non-synthetic concentrated flavor drives from 100% pure and natural botanical sources. The majority of oils are either elk-harvested or farmed in small batches without pesticides. I highly recommend these products for home use, particularly the Coriander Leaf, Bergamot and Celery which we have also used!
